Q. So what drew you to chocolate?
A. Chocolate drew us to chocolate! An affordable luxury that can be experienced by everyone, plus we have a point of view about chocolate that needed to be shared. Being surrounded by great vineyards, farm stands and organic herb farms, we had to share, it was a calling.

Q. How do you capture so much flavor in your chocolates?
A. With our chocolates, form follows function. From the garnish on top to the ultra smooth centers each ingredient carries its weight to create an experience greater than the sum of its parts.

Q. How do you pronounce Chokola’j?
A. Pronounced cho-ko-lah, the “J” sounds like an “H” as in ancient Maya tradition.

Q. How do you choose your ingredients?
A. We choose our ingredients based on taste first and then try to find them produced in eco-friendly ways. This means our ingredients benefit the environment in many different ways. But first they have to be the finest available.

Q. What does cacao percentage mean? i.e. – 63% Cacao
A. The percentage represents the amount of Cacao (seeds from which chocolate is made) in the chocolate. But is only one factor in determining the quality of the chocolate. Like coffee, the handling of the seeds or “nibs”, how they are grown, where they are grown and how are they roasted all affects the final outcome of the chocolate.

Q. Do you support Fair Trade?
A. Yes! We produce many of our chocolates with Fair Trade cacao.

Q. What’s the best way to store them?
A. Basically store them at 65 degrees out of direct sunlight. Try to finish the chocolates within 2 weeks, as they are at their peek of freshness.
